Cocktail: Poinsettia

This little beauty is perfect for Christmas - rich, heavy port, sharp cranberry and sweet Prosecco are perfect festive flavours, and turn this cocktail a beautiful ruby red. Chill the Prosecco in the fridge before opening, as this makes it less likely to fizz up explosively, then ease off the wire and gently wriggle the cork out of the bottle. Half-fill a wine glass with Prosecco and top up with cranberry juice, then add a quick slug of port. Don't be tempted to add too much or you won't taste anything else - just have another one afterwards... cheers!
